How do I get rid of the these modules I don't have?

Nope. You can't. I've asked for it a few times. I think it's a marketing tactic to make you want those modules ;)

Yeah don't want to see any Module Not Founds on the screen, must purchase the module. :)

So if those fields are not customizable how do you set up fields for salinity orp etc for a second tank system?

Say you have a frag tank and a display tank with double of everything, not zero of something.

How does that work?

You need another RA. I dont think you could have two orp or two salinity probes. Only the ph has a second.

No. It will only take Salinity probe. I asked a little while ago because I wanted to put a probe in à mixing station I was thinking of sitting up.
