So what is everyone's preference to LED dimming?

Are there any pros or cons to either. Be it lighting for the coral or additional wear on the drivers or LED's?

Its completely dependent on what you want to do. For typical usage i would recommend slope.

Parabola is good but it's only going to hit the peak intensity for a short time before it starts dimming again. This is good for moonlight or other effects.
