What are the maximum distances on the temp sensor and dimming expansion moving to a remote sump head unit will be 20' from display need to control my lights and wp25 and sense temp

You would have no problems with the wp25 and lights.
For temp probe, you may. If you use the 10ft probe, you are more likely to achieve that distance than the 3ft one.
They have some components built into the sheath that makes them more suitable for long reach.

I'm also looking into placing some components around 12' feet away (moving the sump to the basement), one of the being an additional relay box and the pH probe.
- Would I have issues with the pH probe at that distance?
- Would I have issues with a relay box at that distance? What would be best and/or easier a long USB cable or a long communication cable?

You would be fine with the pH.
Long Communication cable is better.

I don't sell them.
It's a SVGA cable. Just make sure they have all 15 wires inside. Some cheap ones don't have it.
I've seen people using breakout and wired with CAT5 cable.

I have two of those exact breakouts. Finally got my 2nd and 3rd tank hooked to my RA+
I used two of those break outs, one on each end of two 25 foot pieces of CAT6 cable and terminated all four pairs of each cat6 cable for a total of 16 wires. The breakout has 16 terminations (one extra for shield\shell\gnd). Is working GREAT so far. RA+ by the big tank expansion relay box by the QT\Hospital tanks.
