Is there a command to leave the LCD and backlight on?

unsure. but I know you can adjust the amount of time it is on via internal memory.

Maybe if its set to 0...have to look at the code..

You can keep resetting the timer, so it will never expire.
Try placing this on loop() section:

ReefAngel.Timer[LCD_TIMER].Start();
